Also, make sure the snapshot is taken when the Preview Window is set to Quality > 'Best, Full' and not anything like 'Preview, Auto'; in which case the jitter would be from the changes in JPG compr ...

Open in it Photoshop, Filter > Video > Deinterlace. Open in Vegas.

Files from your Mac will be .mov's, which work perfectly fine in the PC version of all the Lab programs. So no problem there.
